Emulsification
Emulsification studies were conducted with
water and canola oil (no surfactant). Varying amounts
of horsepower were used as designated by Hz under the
jars. As
horsepower was increased, the time the emulsion was
stable increased.
This can be directly related to the particle size
achieved.
The SPR can be used to “tune” particle
size.

The picture above,
taken a day after the emulsions were made, shows how
changing the rpms changes particle size in an emulsion
and thus the stability.
